Jackfruit seeds curry

Jackfruit seeds can be used to make a delicious and nutritious curry. Here’s a simple recipe for Jackfruit Seeds Curry:

Ingredients:

  • 1 cup jackfruit seeds (boiled and peeled)
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, chopped (adjust to your spice preference)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to your spice preference)
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon garam masala
  • 1/2 cup coconut milk
  • 2 tablespoons oil
  • Salt to taste
  • Fresh cilantro (coriander leaves) for garnish

Instructions:

  1. Prepare the jackfruit seeds: Boil the jackfruit seeds until they are tender. Once they are cooked, peel off the outer white layer, revealing the edible seed inside. Cut them into halves or quarters if they are large.
  2. Heat oil in a pan or a kadhai over medium heat. Add cumin seeds and mustard seeds and let them splutter.
  3. Add chopped onions and sauté until they turn translucent.
  4. Stir in minced garlic, ginger, and green chilies. Sauté for another minute until the raw smell disappears.
  5. Add chopped tomatoes and cook until they become soft and mushy.
  6. Add turmeric powder, red chili powder, ground coriander, and salt. Mix well and cook the spices for a couple of minutes.
  7. Add the boiled and peeled jackfruit seeds to the spice mixture. Stir to coat the seeds with the spices.
  8. Pour in the coconut milk and bring the curry to a simmer. Let it cook on low heat for about 10-15 minutes, allowing the flavors to meld together and the curry to thicken.
  9. Sprinkle garam masala over the curry and give it a final stir.
  10. Garnish with fresh cilantro leaves.

Rehydration Method

Add Jackfruit seeds to container and soak  it with 80C water  about 30 – 40 munites.container need well covered. If you like solty taste. mix tittle solt with water before adding seeds.
