How to Make Ceylon Cinnamon Sticks?

Once the tree is mature enough, select a branch for harvesting. Identified the appropriate branch by its dark brown color and peeling bark. Using a sharp knife, carefully strip off a section of the outer bark from the branch. Be gentle to avoid damaging the underlying layers.

Start from one end of the section you removed and gently pry the bark away from the branch. Gradually work way down, separating the bark from the wood. Take care not to remove too much of the inner layers, as the bark should remain intact. Once piece of cinnamon bark, roll it tightly lengthwise. Apply a bit of pressure to ensure a compact and solid cinnamon stick. If the bark is too thick, Use a rolling pin to flatten and thin it out slightly. Place the rolled cinnamon sticks in a well-ventilated area away from direct sunlight. Allow them to air dry for several days or until they become hard and brittle. This drying process helps intensify the cinnamon flavor.

Once the cinnamon sticks are completely dry, store them in an airtight container or sealable bag. Store them in a cool, dry place away from moisture and direct sunlight to preserve their flavor and aroma.
