  • 2 cans of mature jackfruit (in water or brine), drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving


  • In a large pot or deep skillet, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and grated ginger, sauté until the onion is translucent and the mixture is fragrant.
  • Add the curry powder, ground cumin, and ground coriander, stirring well to coat the onions and garlic with the spices.
  • Add the drained jackfruit to the pot and stir to combine with the spice mixture.
  • Pour in the coconut milk and vegetable broth, bringing the mixture to a simmer.
  • Let the curry simmer for about 20-25 minutes, allowing the flavors to meld and the jackfruit to soften.
  • Season with salt and pepper to taste.
  • Garnish with fresh cilantro and serve the jackfruit curry over cooked rice.
